Proven – restaurant review

Divergence is the name of the game for Bagel Boy. From humble beginnings in the corner of a bar on Park Street, the business has since spread its wings with homes on St Nicholas Street and Gloucester Road, as well as mobile units at festivals across the summer.

Now, directly underneath their home in the Old City they are making pizzas at Proven – selling them by the slice on St Stephen’s Street in what used to be part of Mr Wolf’s (now in their own new home almost opposite Bagel Boy on St Nicholas Street).

The proposition at Proven is simple with seven options currently available from the mozzarella, tomato sauce and basil leaves for £2, to £2.50 slices which currently include ground chipotle beef, salsa verde, mozzarella, jalapeño, rocket and tomato sauce; and capers, anchovy, black olive, cherry tomatoes, roasted garlic, mozzarella, rocket and tomato sauce.

You can add your own extras such as olives and smoked salt for a small extra cost if you want more, and there are also deli options which change daily, in a small room with seating for about a dozen customers.

These pizzas are big. Very big. 20-inch whoppers which if you give them due notice before midday can be bought whole and feed your entire office for a week.

My slice of the capers and anchovy number was very good indeed, beautifully crispy, packed with flavour and if you’re not overly hungry one slice can suffice for lunch.

Bagel Boy have struck gold again. Proven has already proved to be serving some of the best pizzas in Bristol.
