Feeding Bristol’s pasta-hungry population

By Issy Packer  Thursday May 17, 2018

If you already know about Pasta Slut, you know it’s serving some of the best food in Bristol every Wednesday.

It began as a Facebook group created by Hayley Meredith and has steadily grown in popularity since then with big plans in the pipeline.

After going from job to job for the past ten years, Hayley says that she is finally doing what she loves – and Bristol’s pasta fans seem to agree, with the business already becoming a social media star.

“Pasta Slut has always been in production,” Hayley says, “whether I knew it or not. It’s always been something I wanted to do but either the timing wasn’t right or I didn’t have the balls to do it.”

Hayley Meredith has always loved cooking

After years of doing jobs she hated, she began to pursue her love of cooking full time. About a year ago, she began to cook for large groups of people and since then her love for food has grown and grown.

All of Hayley’s recipes have been passed down from her mother and grandmother who are Sicilian and the authentic taste of Italy is seen in every dish she offers.

After previously living in London for five years, Hayley moved to Bristol six months ago and her business as a lunch club began to grow.

“It began as a group on Facebook as a way of meeting people while I settled in to Bristol,” she tells Bristol24/7. “People have just been adding and adding their friends, and now I’m cooking for people I don’t know.”

There is a choice of a vegetarian and meat dish (£7), which varies each week and is ready for delivery or collection on Wednesdays, with Hayley hoping to grow the business to offer lunches on Mondays, Wednesdays and Fridays in the near future.

As festival season rolls around, this year she will have a stall at Love Saves the Day and at weekend festival Lovebox, held in London.

Despite never having taken her cooking to a festival before, Hayley is confident as she plans a vegetarian and vegan menu.

“They’ll be simple Sicilian-inspired dishes that are perfect for setting you up for a day and night of dancing in the sunshine,” she says. “I am nervous but in a good way. I have a good team to help me at the festival – two girls who I am very lucky to have.”

After a popular event in London, Hayley also has plans to host a supper club at Edit Kitchen & Bar on Cheltenham Road sometime in June, offering a three course meal of Sicilian inspired food and cocktails.

Hayley credits her move to Bristol and the people she has met while here for helping her to grow her business. “Bristol is a great city,” she says. “People are willing to help you and they are very supportive.”
