Recipes- Elliott Lidstone’s spelt risotto

But if you can’t make it, then do the next best thing and whip up this delightful spelt risotto from Box-E chef, Elliott Lidstone. It can be prepared in under an hour and is designed to make the most of some wonderful local ingredients – rapeseed oil from Bath Harvest, Severn Project parsley, spelt from Sharpham Park and Sheep Rustler cheese from White Lake, all of which can be sourced from ethical online grocer, Farmdrop.

Spelt, cauliflower and rapeseed oil risotto with Sheep Rustler (serves 4)

Ingredients:
For the cauliflower purée
1 cauliflower
100ml rapeseed oil

For the risotto
2 shallots, finely chopped
2 cloves garlic, crushed
2 sticks celery, finely chopped
1/2 leek, finely chopped
2 tbsp rapeseed oil
200g spelt
200ml white wine
500ml water or stock
50g sheep rustler, grated
50g chopped parsley to finish

Method

1. Cut the cauliflower into small pieces and boil until soft. Drain well and blitz in a blender until puréed. Add the oil and set aside.

2. In a large pan, sweat all the vegetables in the rapeseed oil until they soften. Add the spelt and cook for a few minutes, then add the wine and cook for a few minutes longer, mixing to ensure the spelt doesn’t stick to the bottom of the pan.

3. Add a ladleful of stock and cook until the liquid has been absorbed. Repeat this process until all the stock has been used up and the spelt is tender.

4. Before serving, stir in the cauliflower purée until your risotto has a light creamy consistency. Add the cheese to taste, season with salt and pepper and finish with the fresh parsley.

5. For an optional extra, top with fried enoki mushrooms or shredded leeks.
