Bagels and speciality coffee coming soon from Little Bagel Co.
In a previous role as an account manager with Extract Coffee in St Werburgh’s, Wes Thompson helped dozens of people open their first businesses across Bristol and the South West.
Now, the roles have ben reversed and is is Wes who has the keys to his first premises, Little Bagel Co, which he will be opening soon serving bagels and speciality coffee.
Little Bagel Co. promises to be “a homage to bagel culture in New York”, inspired by Wes’ trips to the Big Apple, making fresh, hand rolled bagels every day with a variety of fillings.

On the coffee side of things, Wes will be serving a house blend from Fire & Flow, a roaster from Cirencester co-founded by a former Extract colleague, Callum Parsons.
Ahead of Little Bagel Co’s opening, Wes has been busy developing his recipes and sharing his creations on Instagram:

Wes, 31, lives close to the arches on Cheltenham Road but is originally from Great Torrington in Devon.
He was also previously general manager of the original Boston Tea Party on Whiteladies Road and pre-pandemic was head of coffee at The Newt in Somerset.
“I’ve just got to the stage where I’m ready to do this myself,” Wes told Bristol24/7 on a recent afternoon as the WiFi was being set up in his new cafe.
As other people were baking banana bread during lockdown, Wes was baking bagels and got the bug, with his business idea developing from there.
Little Bagel Co. will open every morning at 7.30am with two varieties of breakfast bagels, one meat and one vegan; with nine different bagels available during the day, one-third meat and fish, one-third veggie and one-third-vegan.

“I want Little Bagel Co. to be dynamic and fun and buzzy,” added Wes. “With an open kitchen, there also won’t be anywhere to hide!”
Little Bagel Co. is due to open at 80 Queen’s Road on Clifton Triangle on July 6.
