Bakers & Co reopens as sourdough bakery and coffee shop
The co-owner of Bakers & Co has said that support from the local community “has been a real lifeline” during the coronavirus pandemic.
Bakers & Co has now reopened as a sourdough bakery and coffee shop, baking more bread and pastries from scratch with a live sourdough starter used in everything made in-house, even the brownies.
“We managed to keep Bakers open throughout lockdown as a bakery and provisions store.

“It’s seen many transitions over the last few months, helping keep some of our other brands alive before we could reopen them,” said Kieran Waite, whose other businesses include Bravas, Gambas and Cargo Cantina.
“At times we didn’t know if we’d be able to keep going but the local support has been a real lifeline.”

Head baker Brett St Clair said that Bakers & Co’s sourdough croissants and morning buns came out of necessity of not being able to get fresh yeast during lockdown.
“Our locals noticed how much they had improved, and we haven’t been able to keep up with demand,” said Brett.
“We started using sourdough in the brownies to evolve the things we made before, so if we were going to continue making them then we were going to make them better than before.”
