Bearpit bus to be turned into Mexican kitchen

By Rachel Morris  Thursday Mar 5, 2015

The Bearpit bus is being transformed into a new Mexican restaurant.

Bearritos is being launched by local entrepreneurs Robin Halpenny and Simon Green after their business idea was chosen by the Bearpit Improvement Group over several other start ups and ideas.

“The dining area will be on the top deck,” says Robin. “The kitchen will be downstairs, where we’ll serve food to go. We can’t wait.”

Bearrito’s menu will be more comprehensive than the name suggests and will include tacos, burritos, tortas, salsas, quesadillas, chilaquiles, huevos rancheros, and molletes; as well as Mexican inspired drinks.

“There will be plenty of vegetarian and vegan options on the menu, and our meat will always be ethically sourced,” Robin adds.

But despite winning the tenancy of the Bearpit bus, the pair are still a way off being able to launch Bearritos and are asking the people of Bristol for help to raise £15,000 through a crowdfunding campaign.

The money will pay for “everything from kitchen equipment to electrics, plumbing, upholstery in the dining area, signage and some surprise finishing touches which will make the place extra special,” says Robin.

Their crowdfunding page reads: We are leaving our jobs and committing our own money, time and lives to pursue this dream. We just need a bit more help to make it possible.

“It’s an ambitious target but I think we can do it,” says Simon.

Pledge £5 towards the Bearrito bus and you’ll be able to enjoy a Bearritos main meal.
