Bristol to get UK’s first lasagna wine bar

Lasagna is set to be dragged out of the 1980s and into the present day with the opening of the UK’s first lasagna wine bar in Bristol.

It will see a change of emphasis of La Sorella on St Stephen’s Street in the Old City, with some of the favourite pasta dishes at its sister restaurants, Pasta Loco and Pasta Ripiena, transformed into lasagnas.

There will also be a renewed emphasis on wine at the new La Sorella, which will see later opening hours and closing hours.

“People wanted something a little bit more substantial,” La Sorella co-owner Dominic Borel told Bristol24/7.

“They wanted to stay there more in the evening, they wanted that casual, relaxed, approachable vibe.”

Despite the success of La Sorella, currently a deli and aperitivo bar, Dominic candidly admitted that its business model was not so viable.

Dominic and his close-knit team realised that among the pasta they serve elsewhere, lasagna has not yet had its time to shine.

“It almost got lost within the family-run Italian restaurants. We thought, how can we make it unique? So we’ll take recipes from Loco and Ripiena, develop them into lasagna, accompanied by unique Italian wines.

“It’s an Italian wine bar that cannot be replicated.”

The new look La Sorella is due to open in March, with La Sorella also set to become an outside catering company from April based out of a kitchen in Easton, which will also become a development kitchen for Pasta Loco, Pasta Ripiena and Bianchis.
