Bristol’s own version of Pimm’s is a taste of summer
“Like Pimm’s, but local.”
That’s how the team at Psychopomp describe their new Summer Cup, the newest drink to be made at their distillery on St Michael’s Hill.
It’s a taste of summer made in Bristol using their own Woden gin as a base, with a blend of strawberries, raspberries, oranges and a selection of flowers, and vermouth and triple sec from the Aperitivo Co. “to create a fresh take on a British classic”.

“Pimm’s is obviously a heritage brand but it’s mass produced,” Steph Smith, head of operations for Psychopomp and a self-confessed fan of Pimm’s, told Bristol24/7.
“We’re just all about doing it small batch and making it with local ingredients.”

“We just love booze, we love making things and we love trying to challenge ourselves,” Steph added.
“We always want to make things that we drink and that we really enjoy drinking with our friends.
“This came out of the fact that we love drinking Pimm’s when the sun shines, so we decided to have a little play to make something delicious.”

It’s a busy time for Psychopomp and their sister distillery, Circumstance, which is getting ready to launch the first whisky to be made in Bristol for more than 80 years, currently sitting in barrels at their base in Whitehall.
From February, Psychopomp has also been a carbon neutral distillery, which has seen them change their bottles to recycled glass and move to a 100 per cent organic British base spirit.
