Bristol’s smallest burger restaurant in running for UK’s best burger
A Bristol chef’s love of ramen has seen him create a burger which is now officially one of the best in the UK .
Alex Hayes of Squeezed in Wapping Wharf had the inspiration for the One Inch Punch from the idea of building layer upon layer of umami, and using various types of beef: fat, cheek and mince.
Alex will be creating the One Inch Punch – double beef patty, braised ox cheek, white miso & beef fat butter, cheese, mushroom duxelles & roast tomato – at the National Burger Awards 2019, competing with chefs from up and down the land to be named UK champion in February.

“I’m looking forward to cooking on the day,” Alex told Bristol24/7. “It’s a chance to learn about what inspires fellow chefs around the country.
“I’m looking forward to showcasing our work and I’m really proud that we can represent Bristol on a national scale.”

Casual Dining magazine’s National Burger Awards is a one-day competition which sees entrants battling to impress a panel of industry experts.
Alex will join finalists in a cook-off consisting of two rounds. They will firstly be required to cook their own signature burger in front of judges, before creating a technical burger made up from a specific selection of ingredients that will be supplied on the day.
Three awards are presented: the best technical burger, the best signature burger and the overall National Burger Awards champion who will also take home a prize of £1000.
The Juicy Classic from Cut + Grind in London’s King’s Cross was named the best burger in the UK at the National Burger Awards 2018. Cooked by head chef Sammy Ayjkac, the Juicy Classic was made with a chuck, brisket, rump and rib cap patty, served with burger béarnaise, lettuce, British cheddar, pickles and red onion.
