New cafe and bakery set to expand to become multi-purpose events space

By Martin Booth  Thursday Oct 8, 2020

In a reversal of fortunes, a plucky independent hospitality business has moved into a shop previously occupied by one of the world’s biggest food and drink giants.

Dareshack on Wine Street is currently a cafe and a bakery but has its sights set on becoming a multi-purpose events space.

It is located in what for many years was a Starbucks, with its owners also planning on knocking through to the former Greggs next door to create even more space for their ambitious plans.

For now, a bakery hidden out of view in the deceptively spacious L-shaped unit is making delicious goods, with coffee the first ever blend from Stokes Croft’s Triple Co Roast and teas from Canton.

On the counter on Wednesday were a trio of donuts (vanilla custard, chocolate brownie, and lemon mousse with berry compote), banana bread, cakes and cookies.

Dareshack owners have brought together an experienced team, with pastry chef Daisy Mullins formerly of the Bristol Loaf, Epiphany and Watershed ably assisted by former Convoy Espresso manager Ri Meredith; and head barista Mike Jordan formerly of 640East and Bath Coffee Company.

Dareshack owners Adda Cohn and Gui Petrini had moved to Bristol from London specifically to follow their dreams of opening this business, with the coronavirus pandemic forcing them to swiftly re-evaluate their initial plans.

But they are now halfway through these original aims and hope to evolve as a destination where the arts space, micro bakery and coffee bar work in conjunction with one another.

“Fortunately, we do have ‘dare’ in our name and we will continue to believe, and work hard, to expand our new shop to the other side, where at the heart of Dareshack, is our studio space – a hub for devising new work, testing ideas and hosting live experiences.

“Until then, expect art installations, talks, workshops and Covid-safe artistic experiences and plenty of the best sourdough bread, artisan cakes and speciality coffee and tea you can find in Bristol city centre.”
