Former Paco Tapas head chef to launch vegan tapas venture

Traditional Spanish tapas is a cuisine that Dave Hazell became well accustomed to cooking during his time as head chef at Paco Tapas.

Now Hazell has left the Michelin-starred restaurant in Redcliffe, he has set up an all-vegan venture.

In September, he will be launching the new business, Casa Verde, promising “exquisite, traditional Spanish small plates (brought) to life while showcasing nature’s earth-grown bounty”.

A tortilla will be made with aquafaba (also known as chickpea water), flour and oat milk; with another dish showcased on Casa Verde’s Instagram account a wild mushroom wet rice with alioli.

Hazell started his career in restaurants as a kitchen porter. He spent time working as a chef in the Lido and The Ox, before becoming head chef at Pi Shop and then Paco Tapas.

Casa Verde’s opening weekend will be at No. 12 Easton on September 6 and 7.
