‘New chapter’ for well-established Clifton restaurant

By Martin Booth  Monday Aug 12, 2019

A well-established Clifton restaurant is teaming up with an experienced team in the hope of turning around its fortunes.

After nine years, Rosemarino remains a popular old favourite but now looks sets to be reinvigorated for a “new chapter”.

Rosemarino occupies a corner building on York Place that was for many years the much-loved York Cafe. In 2014, the second Rosemarino opened on Colston Street in the city centre but it has since closed.

Rosemarino co-founders Sam Fryer and Mirco Bertoldi have now joined forces with the Hyde & Co group, owners of the likes of The Ox, Pata Negra and Bambalan.

Sam said: “The restaurant scene in Bristol is so fast-paced and we’ve always felt it’s important not to forget the more established venues amongst all the new openings, so the partnership with Hyde & Co was a great opportunity for us to start a new chapter and bring some fresh new ideas to the table.”

Sam and Hyde & Co co-owner Nathan Lee began working together 17 years ago at The Glassboat and later Goldbrick House.

“So it’s extremely exciting to be working with each other again and pooling our shared expertise to bring something really special to Clifton,” Sam added.

The new team promise that the Italian influence will remain strong at Rosemarino, with co-founder Mirco Bertoldi now based in Verona where he supplies restaurants across Bristol and the UK with Italian produce.

Head chef Emilio Allegretti from Modena has also recently introduced a new menu including a selection of Italian small plates, known as cicchetti.

Hyde & Co was opened off the Clifton Triangle at around the same time as Rosemarino, with Lee and his team later opening Milk Thistle and most recently Seven Lucky Gods at Wapping Wharf.

Lee said: “Having weathered the storm of what’s been a very unpredictable decade for the food and drink industry we saw this partnership as a great opportunity to help out a fellow Bristol restaurant and celebrate everything that our industry has to offer.”
