New restaurant, cafe and bar to host ‘provocative programme of experiences’

By Martin Booth  Thursday May 14, 2020

One of the most intriguing new food and drink openings in Bristol is baking bread while the future of their concept shop remains uncertain due to the coronavirus pandemic.

Dareshack is due to open on Wine Street opposite Castle Park in units most recently occupied by Starbucks and Greggs.

But what they are promising is far removed from those two huge chains.

“At this moment in time, we would have been refurbishing our long-waited premises in the city centre, what we call a concept shop,” said Dareshack co-owner Adda Cohn.

Dareshack has begun life by baking bread and cinnamon buns, which are able to be delivered across Bristol.

Dareshack will be a restaurant, cafe and bar, “along with a multi-purpose studio space hosting a provocative programme of experiences”, according to Adda.

“But more importantly, a safe place where ideas can be conceived and nurtured. A platform for a community of unsettled minds”.

Adda has more than 14 years’ experience in film, photography, theatre, concerts, and events production, previously working for the likes of Glastonbury Festival and Bristol Old Vic.

She has set up Dareshack with her partner, Gui Petrini, an expert in the advertising and entertainment industry who most recently implemented and led the hospitality operations at St George’s.

Adda and Gui have moved to Bristol from London, where they ran Sampa Coffee in Holborn, which “combined the cultures of Sao Paulo and London in a creative and inviting space”.

Adda added: “Since May 2019 we both have been dedicating 100 per cent of our time – and everything else really – to make Dareshack happen, which is a culmination of our professional experiences and real passion for hospitality and entertainment.”
