One of Bristol’s best restaurants is cooking Italian fried chicken during lockdown
A takeaway side project from one of Bristol’s best restaurants specialises in Italian fried chicken.
But you’ve got to be quick if you want to experience the food at your own home, with slots released weekly on Mondays for delivery or collection every Friday and Saturday.
Osteria-cum-wine-bar Marmo on Baldwin Street appears in the 2021 Michelin Guide, with judges praising Cosmo Sterck’s concise menu of Italian dishes from the open kitchen.

During lockdown, Cosmo and wife Lily have launched Apollo 31, with the next reservations scheduled for release via Tock on February 1 at 5pm.
“Given the current state of affairs and in a bid to keep our sanity, we are starting a little side project,” the pair wrote on Instagram.

Lily told Bristol24/7 via email that the idea behind Apollo 31 “was to provide something fun and different to our Marmo offering, something which (we hope!) is a tasty weekend treat that travels well and doesn’t require any cooking at home”.
She said: “It’s enabled us to bring back some of the team from furlough (in the kitchen and delivering) and resume working with some of our suppliers.
“The chicken is marinated in buttermilk for 48 hours before being coated in a polenta mix and fried; it is served with triple cooked chips, pickles and a salad (at the moment the salad is of winter tomatoes and fennel pollen) for £14 per person.
“There’s also the option to add sauces (cacio e pepe or ’nduja), £1.50 each and chocolate mousse, £5.
“At the moment we’re just offering the chicken in order to keep things as streamlined as possible, but who knows what the future will bring!”
