Recently opened south Bristol restaurant featured in Michelin Guide

A Bristol restaurant which has been open for just four months has been recognised in the prestigious Michelin Guide.

COR, which is located on North Street in Bedminster, is run by husband and wife, Mark and Karen Chapman, who met in Sydney while they were working in hospitality.

The restaurant specialises in small plates and its name originates from the Latin word ‘heart’.

In the guide, COR is described as “somewhere between a Mediterranean restaurant and a tapas bar” with “an air of contagious positivity and is a perfect fit for this buzzy neighbourhood”.

Prior to opening COR, which is Mark’s his first business, he was executive chef at Bravas on Cotham Hill, and Gambas and Cargo Cantina in Wapping Wharf. Under Mark’s management Gambas was awarded a Michelin plate in 2021 and in 2022.

Mark said he and his team are “thrilled” by the recent news. He added: “On a personal level, we are absolutely thrilled that COR has been recognised by and included in the Michelin Guide.

“It’s the greatest food guide in the world and to be recognised with this honour is something I have dreamed of since becoming an apprentice chef in Australia.

“As for the team, we are so proud of them and they are extremely happy also. A lot of the team we have with us now have worked with me previous to COR and been with us since opening.

“Their hard work, passion and dedication is rewarded when accolades like this are given. We could not be more proud of them professionally and as a hospitality family.

“COR has only been open four months and we have already had an incredible journey so far. We are looking forward to continue to learn, develop and grow this new adventure together.”

COR sits alongside a number of other new Bristol restaurants in the Michelin Guide, including Harbour House, Casa and Chef’s Table.

In January, COR was named among Square Meal’s Top 100 Restaurant Awards 2023 which was voted for by diners.
