Rum distillery to open on Park Street
Ambitious plans for a cafe, bar and restaurant with its own onsite rum distillery have been unveiled for one of Park Street’s most prominent buildings.
The Bristol & Bath Rum Distillery aim to move into premises empty for more than a year that were most recently occupied by Jamie’s Italian and for many years was Blackwell’s bookshop.
News of their plans comes only a few days after the release of the first rum from new Whitehall distillery Circumstance, with Cane becoming the first rum ever to be fermented and distilled in Bristol.

The premises will include enclosed spirit stills on both the ground and first floors; with the first floor, previously used for dining and private dining by Jamie’s Italian, to be used for organised industry training and customer workshops.
Interior alterations will need to be made to the listing building, but planning officers from Bristol City Council have recommended the plans for approval.
