New beer bar coming soon to North Street

Bristol’s beer scene is set to get even better next month with the arrival on North Street of The Old Butchers, a collaboration between The Old Bookshop just a few doors down and St Werburgh’s brewery Wiper & True.

Six beers from Wiper & True will always be on tap at The Old Butchers, alongside limited edition releases, and experimental brews in development – testing potential recipes and new concepts for beer before it is brewed to full scale and for general release.

There will also be a monthly bottle list curated by the brewers to showcase some of their favourite beers from across the world – an extension of the closely guarded stash in a fridge at the brewery.

Due to open its doors on April 1 with food being served from shortly afterwards, the bar will be open seven days a week in what was most recently an antiques shop.

For many years, 57 North Street was the site of Collard’s family butchers, whose name can still be seen on the tiles outside, with some of the original wall tiling inside being unearthed and restored for the new bar.

Fresh poultry and meat carcasses hang outside Collard’s. The butchers closed in the late 1990s.

The Old Butchers is due to open on North Street on April 1

“We’ve been very excited about this bar not only because of the quality of Wiper & True’s beer but also in restoring the interiors of The Old Butchers and creating somewhere that we hope the neighbourhood will be proud of,” says Old Bookshop owner Ben Gatt (pictured above left).

Michael Wiper of Wiper & True (pictured above right) adds: “Bristol is such a creative city. It’s a supportive place with so many interesting people who are happy to work together and collaborate.

“The Old Bookshop has long been a part of that energy and we’re looking forward to The Old Butchers bringing even more energy to the city’s food and drink scene.”

The Old Bookshop already have a successful collaboration with Bristol gin Psychopomp with a bar within a bar, while earlier this year they also opened a new work hub, curiosities shop and cafe in Spike Island.

Wiper & True are planning to open a tap room later this year in St Werburgh’s, following in the footsteps of Moor Beer and Left Handed Giant.
