Farmdrop Recipe: Super Green Noodle Bowl

Ingredients

1/2 head of broccoli, cut into bite-size florets
1 courgette, peeled lengthways
100g cavolo nero, stripped from its stalks
2 spring onions, sliced into rounds
50g beansprouts
5g mint
5g coriander
2 garlic cloves, crushed and chopped
1 inch of ginger, peeled and chopped
1 shallot, chopped
100g brown rice vermicelli noodles
1 tbsp miso
500ml hot water
1 tbsp soy sauce
1 tbsp brown rice vinegar
1 tbsp sesame oil

Here’s how you do it:
1) Add a glug of oil to a saucepan and fry the shallot, garlic, chilli and ginger for two minutes.
2) Add the miso, stir in the hot water and add the soy sauce, vinegar and sesame oil.
3) Boil the broccoli and cavolo nero in the broth for 3 minutes, until tender.
4) Add the noodles, cook until soft.
5) Transfer to a bowl then top with the courgette ribbons, beansprouts, herbs and spring onions.
