Recipe: Green Spinach cake

Chai Shai is an Indian deli, restaurant and takeaway run by Shilpi and Faruk Choudhury, who were both born in Bangladesh.

The family business at the foot of Jacob’s Wells Road in Hotwells opened earlier this year while Faruk was still Bristol Lord Mayor, come the evenings swapping the ceremonial robes for an apron.

Green spinach cake – which Shilpi says is even greener if using bigger leaves – is a Turkish recipe passed on to her by a Polish friend.

It is a cake that has become a firm favourite of regulars at Chai Shai, which will soon be expanding its small seating area to allow more customers to eat in.

Shilpi and Faruk will also be running regular Indian cookery classes soon.

Ingredients

3 eggs

1tsp Vanilla extract

200g of spinach

1/2 cup of milk

1/2 cup sunflower oil

2 cups of flour

1 1/2 cups of caster sugar

2 tsp baking powder

Method

1) Chop the spinach and boil with milk and puree

2) Pre-heat the oven to 180-desgrees C (360 F)

3) Whisk the eggs and caster sugar until foaming

4) Add the vegetable oil

5) Add the the vanilla extract, sifted baking powder and flour

6) Add in spinach puree 

7) Mix well

8) Transfer to a lined baking tray, approx. 38cm x 26cm

9) Bake for 30-35 minutes
