One of Bristol’s best restaurants is opening a shop a few doors away
It’s all about community for Wilsons co-owner Jan Ostle, who could by now have decided to move his acclaimed restaurant to larger premises anywhere else in Bristol or even the UK.
But he wants to remain among the community in Redland that has given him and his team so much.
So the restaurant is remaining and it will soon be joined just a few doors down on Chandos Road with a second space acting as both a shop and extra prep kitchen.

Ostle is already at work transforming the building on the corner of Chandos Road and Brighton Road into the new space, with bread-making set to continue in what was most recently Redland Bakery.
“So we’ve needed more space for ages but didn’t want to change Wilsons, but wanted to make it better,” Ostle told Bristol24/7.
“These new premises will allow us more space to cook and process our own produce. It will also give people in our community access to the amazing produce and ingredients we are so lucky to use in the restaurant.
“We hope to make rely good food more accessible and more affordable to a wider audience. Hopefully this little site will be the first step in doing that.”
