An alternative paleo-inspired pancake recipe
Bristol will eat an estimated 875,000 pancakes this Shrove Tuesday.
But with the typical pancake containing over 200 calories and 10g of fat (plus the abundance of calorific and sugary toppings) the average Pancake Day feast can reach upwards of 1000 calories per person.
Here’s a paleo-inspired protein-packed pancake recipe:

Ingredients (serves 1-2 persons):
1x Cup of Almond Flour
2x Eggs
3-4x tbsp of Coconut Milk
1 Vanilla Pod (split and seeds scraped out)
1x tbsp of Ground Cinnamon
1x tsp of Coconut Oil
Preparation & Cooking:
1. Mix eggs, coconut and vanilla in a bowl and whisk together.
2. Sift in almond flour and cinnamon
3. Heat a large pan over a medium heat; add a tsp of coconut oil to the pan and add the pancake batter in small rounds, quickly turning the pan around to spread the pancake.
4. Cook until brown on the underside, about 45 seconds and then flip to brown the other side
